I compared Amazon’s current offerings and found many great competitors with excellent product qualities to consider, but none were the combination of all qualities that TECHEF’s frying pans are.This pan is dishwasher safe, uses a solid feeling riveted metal handle, and has incredible non-stick coating. Most importantly, the TECHEF Onyx collection (and really their entire product line from personal experience) have a substantial feel to them, with this 8-inch frying pan weighing in at 1 pound 5 ounces. The handle is metal (not plastic), riveted onto the body. The underside conducts heat evenly and rapidly from my gas burners. I’ve found TECHEF’s teflon coating to be unmatched with extremely easy cleanup after having had some time to cool post-cooking.I have no criticisms of this pan but if I was pressed to find fault perhaps inclusion of a lid would have been nice or a contoured pour on the side. I do have plenty of lids that work with this fine piece of cookware.You’ll be able to tell from my quick photos that this is a quality product with a contemporary designed yet highly functional. Turns out i was right. This is why:Pros:** Non stick – When making paella you never want the rice to be mushy. What you do want is for the rice to caramelize and roast a little (socarrat) on the bottom. The nonstick coating on this pan is perfect because it lets it caramelize but it also releases easily. No scrubbing or scouring needed when it comes time to clean up.** Depth – This pan is just shallow enough to make the rice cook evenly. The depth also produces an intense and evenly distributed flavor.** Handles – The double handles make this pan easy to handle while cooking. I’m able to hold the pan with two hands while moving it to the table. It makes it more stable and safer. I also like the fact that the handles stay cool even after cooking for a while.** Lid – Even though i don’t use the lid while cooking paella, It does come in handy after serving. Customer Review: “I’d never made tamagoyaki before, and had heard it was difficult to make with traditional carbon steel or copper pans, as it can be a bit tricky to prevent the egg from sticking, which is an issue I have had with stainless steel, and even some highly questionable quality ceramic non-stick coatings (I’m looking at you Ninja Sizzle!!!), but in my research, I found that this particular pan, especially its non-stick qualities, worked out wonderfully. I was concerned it might not be so good with an electric coil hob stovetop as I currently have, but it was easy to find the right temperature setting by starting at the center medium mark, and adjusting upwards. On my ~40 year old stove, that ended up being the lowest mark on the medium high setting, and I can leave the pan at that setting to heat as I quickly prep the egg mixture. I then spread a little peanut oil with the included silicone oil brush, pour some of the egg mixture into the pan, let it cook a bit – I like to use the spatula to slice the cooking egg a few times with each layer and tilt the pan around to get the liquid mixture to fill in the slits – I then roll the egg over with the spatula, using chop sticks in my other hand to help control the roll as it WILL otherwise slide super easily on the excellent non-stick surface. Slide it to the back of the pan and repeat this pour, cook, fold sequence three or four times. I then like to leave the tamagoyaki in the pan for a short bit to cook it a little extra until it gets some nice brown cooked spots, flip over and repeat the other side, before removing and cutting into four equal pieces and serving with a little Bulldog Katsu sauce and Kewpie (the original Japanese version) mayonnaise. So good. Oh, the included Tamagoyaki recipe is fine, but I personally have the amount of sugar, though I also use aji-mirin, which is a little sweeter than regular mirin. Anyhow, I highly recommend this pan to anyone who wants to make tamagoyaki. The accessories round it out perfectly!”
